    Canning and pickling food is a great way to have delicious summer fruits and vegetables all year round. Just make sure to follow the canning and pickling guidelines from the USDA or another trusted source. What are some foods that you would like to preserve and enjoy later in the year?

    I'd love to start pickling spicy carrots! Eco challenge also inspired me to start baking my own bread. There's nothing better than fresh bread just out of the oven and absolutely slathered in butter.

    I'm not much for a baker. Typically when I have a craving for cake, I go the boked Betty Crocker route. However, this weekend I was particularly inspired by one of my favorite food blogs, Smitten Kitchen, to make a lemon cake from scratch. There were a few hiccups but it turned out delicious! Ashley - 1, Betty - 0.

    Had a successful healing and renewing weekend - a long bike ride and a "Gorge-eous" hike. Muscles are feeling joyfully sore today.

    Nothing makes me happier than walks, hikes, lawn games, or playing sports outside with friends and family.

    Reducing (or eliminating) exhaust emissions and improving public health are two benefits of green vehicles. What other motivators inspire you to consider switching to a more fuel-efficient vehicle?

    After selling my car over a year ago, I've been considering making the transition to electric. In honor of my old 2002 Mustang, I researched the new 2021 all-electric Mustang Mach-E. 300-mi range, 3-sec 0-60...not bad. But let's be real, how it looks and how it sounds is what really matters ;) The body style does not at all look or feel like a true Mustang. I think this alone would sway my from purchasing. C'om Ford, get it together! Until, then I will continue dreaming of a 1969 Mach 1.

    Looking forward to another great eco challenge season!

    Something I'd like to research over the next couple of weeks - what is the carbon footprint of Google searches? How much energy is used, and what amount of carbon is being produced with each search query?
