I am so glad to join 15 of you on our Beacon Team - 3 weeks has gone by fast! I'm looking forward to getting together for an online celebration sometime soon. Teresa will be in contact.

Buy used or buy material that is substainable and renewable and doesn't affect our eco system during harvesting or production

It's going OK but wish it had more things than food. I do a lot more with ecology than food. I do a lot more for climate change than food. Food has been resolved long ago but I can always learn something but I do more with other things that have to do with the environment.

Only one more week to go! I am enjoying reading your posts. Find out anything new about yourself during the last two weeks? I'm noticing how easy it is to eat two non-meat meals a day.

I have learned to shop less and maybe more often if need be so it eliminates waste. It is working well. I also have been peeling fewer vegetables and leaving the skin on and baking or adding them to the pot like that.
