Hey class, today I took a free online yoga class from one of my friends. I also took a 20 minute walk  around my new neighborhood. I accidentally let my cat out so I had to go looking for him too lol.  My parents gave me a bunch of leftovers instead of throwing them away! yay free food. I also cooked a zero waste breakfast

Hello class, I have been moving the past couple days. I feel so bad that I haven't logged in, in a couple of days! I just got my internet and office space set up today so that good! I went on a 25-30 minute walk with my roommates dog and I did yoga/worked out for 30 minutes.

Today I worked although I moved around a lot and set some time to stretch, at 5-10 minute segments. It was a hard day to fulfill everything that I wanted to do.

    Hey class,
Today was a classic Sunday, I am so glad I didn't have to work and I could spend time with my roommates. We spent at least two hours singing karaoke and dancing, We also took my roommates dog to Kelly Point Park and did some hiking, masked and all. We also voted as a group..... Like Ice Cube would say: Today Was A Good Day. Its been months since I had such a classic Sunday. I hope everybody is doing alright! =)

Eco Challenge has been going really great, I have been working out, stretching and moving more than I usually do, and I feel so much better! I have also been cooking more, some of my meals are vegetarian and I never cook veggie meals. (I also cut out butter)

I chose to plant a couple ferns into the ground that I had in pots today because they looked like they were dying, but I am going to make this a project at my new place starting in late October.
  • REFLECTION QUESTION
    Food Zero-Waste Cooking
In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for using every part of a vegetable. How can you incorporate using an entire vegetable (including the skins, tops, stalks, etc.) during your next meal prep?

I used acorn squash, zucchini, local sausage, celery, apples and made home made breadcrumbs, for stuffed squash. My roommate also let me use her juicer, so i used it everyday a couple times a day for the past couple says.

I think Portland does a pretty good job at encouraging people to switch to clean energy, especially since its not that much more money. Although I will take the time to ask my family members and friends if they are also using clean energy.
  • REFLECTION QUESTION

What do you plan to do with the money you save from making more energy efficient choices?
