REFLECTION QUESTIONFood Zero-Waste CookingIn North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for using every part of a vegetable. How can you incorporate using an entire vegetable (including the skins, tops, stalks, etc.) during your next meal prep?
Misti Sporer 10/28/2020 2:20 PMThis has been a fun challenge. My family now knows that they like all parts of the beet - not just the root. We have enjoyed the leaves and stalks of the beets cooked in with all parts of the collard greens. -
REFLECTION QUESTIONAction Track: Healing and Renewal Practice Gratitude for EarthKathleen Dean Moore says that a sense of gratitude leads to a sense of moral obligation. Do you agree? How can we cultivate a sense of gratitude as individuals, and as a society?
Misti Sporer 10/28/2020 2:18 PMSpending time outside is a must for me but rarely do I spend time dwelling on the feelings of gratitude that come when I am outside. By focusing on the gratitude - how lucky I am to live in a place with clear air and healthy streams - I have found that I feel more connected to the natural world in a deeper way and feel more stewardship over the areas I enjoy. I would say that I agree with Moore!-

Misti Sporer 10/28/2020 2:14 PMJoyful movement has been a unique challenge for me in my workouts. Most of the time I just try to get all my steps in/minutes on the machine and often treat exercise as one more to-do on my list of things. Now I look at it as a way to have joy in the movement and ability to move my body. It has shifted my mindset and I have a new found joy for working out! -

Misti Sporer 10/28/2020 2:10 PMI wish my neighborhood thought more about planting native plants rather than non-natives for our "community" flower beds and HOA landscaped areas. It would be great to not have to have so much grass in each yard. Native plants would require less water. Less grass would also mean less water but it would also reduce the amount of fertilizer and weed killer applied to lawns. -
