    I started running outside recently which gives a chance to spend time in nature and have also been hiking a lot more.  It's tough spending so much time at home due to Covid so it's good to spend time outside as much as possible.

    We are past the point of no return when it comes to climate change, we can only mitigate the impacts but we need the political will to do so.  The more people that act locally to improve the planet, the bigger the impact will be globally so I try to do my part as much as possible in my community.

    I learned about how messed up the criminal justice system is in this country and how targeted black people are because of policy that was put in place decades ago.  This is related to environmental justice issues where we see black people who are disproportionately impacted by pollution and other environmental issues.  The deck is stacked against them in many ways.

    Why do people in richer countries eat more meat than people in other places? How does eating more meat affect our planet and other people?

    Richer countries have more access to cheap meat because the farm industry is highly subsidized.  The more meat, especially from cows, increases the methane in the atmosphere which is a more potent greenhouse gas than CO2 causing more climate change impacts.

    What single-use items (e.g. straws, coffee cups, vegetable bags, plastic bags) do you regularly use? What did you substitute or could be substituted instead?

    None! I have my own metal straw or opt not to use a straw, I bring my own coffee cup, produce and shopping bags to stores. The one thing that’s hard is getting takeout food and they put ketchup packets or plastic cutlery in the bag. I try to tell them in the order to not do that but it happens unfortunately.

    In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for using every part of a vegetable. How can you incorporate using an entire vegetable (including the skins, tops, stalks, etc.) during your next meal prep?

    You can use parts of the vegetable that aren't included in the meal you're making by saving to make stock soup later or composting it.
