  • REFLECTION QUESTION
    Food Zero-Waste Cooking
In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for using every part of a vegetable. How can you incorporate using an entire vegetable (including the skins, tops, stalks, etc.) during your next meal prep?

I am still learning how to fully utilize the entire vegetables as I'm new to cooking. I've since learnt a couple of things. For example, I learnt that okra's "head" part actually contained the most nutrients. In the past, I would slice off both the "head" and tip of an okra. Besides that, I also learnt that the roots of parsley make good Chinese soup, a tip from my mom. Also, I tend to buy vegetables in smaller quantities these days to avoid having them rot before I can use them.

I have been missing out the most of the nutrient in okra then! Thank for sharing.

Continuing the zero food waste effort. Please pardon the plastic containers because of food delivery service :p
