REFLECTION QUESTIONFood Zero-Waste CookingIn North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for using every part of a vegetable. How can you incorporate using an entire vegetable (including the skins, tops, stalks, etc.) during your next meal prep?
Charlette Norman 10/15/2020 5:06 PMMy family loves potatoes so one week end we took on different recipes. I chose rosemary potatoes but left the skins on. after steaming them I cut them up and sautéed them with olive oil and salt and pepper with rosemary and everyone loved them so now we cook this at least once a week if not more. I like to make a lot of homemade soups and I use everything when making my base broth. Carrot peels, onion skins, chicken bones etc. nothing goes to waste. -
