    Food Zero-Waste Cooking
In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for using every part of a vegetable. How can you incorporate using an entire vegetable (including the skins, tops, stalks, etc.) during your next meal prep?

My family loves potatoes so one week end we took on different recipes. I chose rosemary potatoes but left the skins on. after steaming them I cut them up and sautéed them with olive oil and salt and pepper with rosemary and everyone loved them so now we cook this at least once a week if not more. I like to make a lot of homemade soups and I use everything when making my base broth. Carrot peels, onion skins, chicken bones etc. nothing goes to waste.

    Food Whole Foods Diet
Michael Pollan states that “it is better to pay the grocer (our edit: or the farmer!) than the doctor.” What are your thoughts on this assertion?

Absolutely. I hate having to buy medicine if I could have prevented needing it if I only would have taken better care of my diet.
