Food Try a New Way to Prep
Canning and pickling food is a great way to have delicious summer fruits and vegetables all year round. Just make sure to follow the canning and pickling guidelines from the USDA or another trusted source. What are some foods that you would like to preserve and enjoy later in the year?

Looking at different scenery and getting air helps me to slow down and think a bit deeper to work through issues and challenges.

I have been participating in a book club reading Waking Up White: And ending Myself in the Story of Race by Debby Irving. It is a book about the subject of white privilege and how to be aware of it's impact on society.

We take bags with us when walking to pick up trash.  For this activity, we picked up several bags of garbage from the beach and area where our cottage is.

    Health Reduce Refined Sugar
Before you started this challenge, did you think you were 'addicted' to sugar? How do you feel now?

Yes, I know I was addicted to sugar.  I did go through a bit of withdrawals causing headaches, but I feel much better.  Plus it helped with my budget and future health concerns.  Each of my sibling deal with different levels of diabetes and I do not have any issues with this disease.

Action Track: Justice for the Whole Community Watch a Documentary about Racial Injustice
What did you learn about racial injustice in the documentary(ies) you watched? How does what you learned connect to your understanding of sustainability?

I have to say the documentary I watched made me cry, upset, and disgusted. It blows my mind that this evilness/racial injustice was and still is in our country today. I have mixed races in my family so racism has not been in my face growing up. I am glad that we are talking about this amongst each other, in our companies and the media today. I know in my heart that our country will change racial injustice because we are starting now.

How does/can practicing gratitude keep you centered and motivated to work for a better world?

We can always remember the bad, but it's always good to look at the wonderful, unexpected and overlooked things in our lives.  It's good to journal so you can look back at year or years from now and see what you were thankful for.

    Health Eliminate Toxic Plastics
What single-use items (e.g. straws, coffee cups, vegetable bags, plastic bags) do you regularly use? What could be substituted instead?

I drank a lot of pop (soft drinks).  By cutting back on these beverages I am cutting back on my usage of plastic bottles and metal can and also decreasing my sugar intake.
