    On the last day of my Eco Challenge, I spent probably 75% of the day in my favorite place: The Mt. Hood National Forest! Unfortunately while hiking I realized that I had not followed all 7 principles of LNT, which was one of my other challenges, and was unable to finish the challenge with all 3 of my daily actions. Still, it was a great time...

    Today I made a vegetarian breakfast with a masa cake and scrambled eggs; tonight I will have a vegan meal of lentils and rice!

    Last day! Wow...okay...veggies went well...food sovereignty and water rights explorations went okay...but transportation was hard, because I had to talk to someone everyday, which wasn't realistic for me this year. I love that the ecochallenge pushes me and the 3 weeks is a great length to make things more of a habit! Thanks ecochallenge!

    I am able to appreciate what I am eating and I feel like I can really taste it. Life just seems slower and easier. I am much my present and focused on just eating instead of diverting my attention elsewhere.
